Cordoban Salmorejo

Cordoban Salmorejo is a Traditional and unique dish.

A tomato soup (or gazpacho) garnished with different ingredients that can be eaten with a spoon or, in a more traditionalway, by dipping pieces of bread.


  • 500 g of ripe tomatoes.
  • 4 tablespoons of olive oil.
  • 2 cloves of garlic.
  • 2 slices of bread from the day before.
  • 1 tablespoon of vinegar.
  • 1 glass of water.
  • 1 egg yolk.
  • Chopped chives and salt.
